NC Choices Whole Animal Butchery & Advanced Charcuterie Workshop for Farmers and Chefs

NC Choices conducted a Whole Animal Butchery and Advanced Charcuterie for Chefs and Farmers Workshop on March 19-20 at the Silk Hope Farm Heritage Center in Silk Hope, NC.

Kari Underly of Range, Inc. in Chicago, IL taught the butchery workshop. Karen Fowler of Chop Shop Butchery in Asheville, NC and James Naquin of Guglhupf in Durham, NC assisted Kari. Craig Deihl of Cypress in Charleston, SC taught the advanced charcuterie workshop.

Bobby Tucker of Okfuskee Farm provided the hogs and Charles Sydnor of Braeburn Farm provided the beef for the workshop.
